Zucchini Spaghetti with Tomatoes & Pesto

Zucchini Spaghetti with Tomatoes & Pesto
Serves one person

7 oz chicken, cubed
1 cup basil, chopped
1 garlic clove
1/4 tsp grapeseed oil
1/4 tsp olive oil
1 1/2 cups zucchini, julienned
1/2 cup cherry tomatoes
sea salt & pepper to taste

In a small blender, blend together basil, garlic and olive oil. Once the mix reaches a smooth consistency, set aside. In a hot non-stick pan with grapeseed oil, add chicken; let cook. Now, add zucchini, tomatoes and pesto sauce, bring to a boil. Ready to serve!


Omelette Cakes – Easter Egg Recipe

Ideal Protein Omelette Cakes Cary NC

Serves one person
4 eggs, whisked
1⁄2 cup leeks, chopped
1⁄2 cup mushrooms
1⁄2 cup green onions
1⁄2 cup tomatoes, sliced
1⁄2  tsp paprika
1⁄2 tsp cumin
1⁄4 tsp grapeseed oil
sea salt & pepper to taste

Cooking Directions:

  1. Preheat the oven at 375°F.
  2. In a hot non-stick pan with grapeseed oil, add mushrooms, leeks, sea salt and pepper; let cook.
  3. Add green onions; let cook.
  4. Before the onions change color, add tomatoes, paprika and cumin; remove from heat and let cool down.
  5. Once the vegetables have cooled down, in a small bowl, mix together with the whisked eggs.
  6. Lastly, pour mixture into a few muffin tins; place in oven until cooked.

Lucky Turkey Burger Salad

IP Turkey Burger Salad

Serves one person – Ideal Protein phase 1-4

7 oz ground turkey
1⁄2 cup iceberg lettuce
1⁄2 cup cucumber, thinly sliced
1 celery stalk, thinly sliced with a potato peeler
1⁄2 cup green onions, chopped
1⁄4 Tbsp garlic powder
1⁄2 lime, juiced
1⁄2 tsp olive oil
1⁄4 tsp grapeseed oil
Sea salt & pepper to taste

Cooking Directions:

  1. In a medium sized bowl, mix together ground turkey and garlic powder; make a patty with the turkey (be careful, its fragile).
  2. Now, in a hot non-stick pan with grapeseed oil, add turkey patty; let cook.
  3. Meanwhile, place iceberg lettuce leafs on a plate and when the turkey burger is well cooked, place it on top of the iceberg lettuce.
  4. Then, start layering on the cucumber slices and celery slivers.
  5. Next, cover with another iceberg lettuce leaf and green onions (the lettuce is the bun).
  6. Lastly, drizzle with olive oil and lime juice.

Chicken Spaghetti Kiss
Serves one person

7 oz chicken, cubed
1 cup zucchini, julienned
1⁄2 cup bell peppers, sliced
1⁄2 cup tomato coulis (strained tomato sauce)
1 garlic clove, minced
1 tsp basil, chopped
1⁄4 tsp grapeseed oil (or olive oil)
Sea salt & pepper to taste

Cooking Directions:

  1. In a hot non-stick pan with grapeseed oil, add chicken; let sear.
  2. Add bell peppers and garlic to your pan.
  3. When the chicken is almost cooked, add in the zucchini.
  4. When everything is ready, place chicken, vegetables and basil over a bed of tomato coulis.
